    Molasses Baked Beans...were a disaster. (Still learning how to use re-hydrated beans.)


    So I was all excited about an 'easy' family recipe for Molasses Slow Cooked/Baked Beans that I was going to make in advance for the weekend (and bring to my Civil War event). The beans always turn out well and I even like them cold.


    This time I decided *instead of using canned beans* (what I grew up using & my recipe assumes), I'd try making this batch from scratch using re-hydrated dried beans. Something different, and a challenge for me (as I haven't had much practice cooking using re-hydrated dried beans. It's something I should get more comfortable using, so I need to make recipes using them to "practice".)


    So Monday night I got out a mix of dried beans that seamed like they'd be good together, measured them out (I measured out too much, first mistake!), and set them to soak overnight. In the morning I drained & rinsed, then set them to soak some more while I was at work.


    Tuesday I cooked up my bacon (in the oven - I like it crisp) and drained the soaking beans & put them in a resealable bag for the fridge. Wednesday morning I assembled all my ingredients (trying to estimate how much more on the sauce ingredients because I had re-hydrated a tad too many beans) and set the mixture in my crock-pot on low and left for work.


    Big Mistake.


    I didn't adjust enough for the uncooked re-hydrated beans. I forgot that on my last recipe using re-hydrated beans I had to boil them first before slow cooking, so I didn't do that this time. Nor did I put any of the reserved liquid into the crock pot (to add extra liquid to compensate for the re-hydrated beans) for while I was gone all day. They were dry and not done.

    :(


    Plus I used Great Northern Beans (which I hadn't used before) and I think they have a different cooking time than the other beans - black, red, pink, & small white beans. (Nothing against the Northern Beans, just a factor I didn't take into consideration.)


    I tried added more liquid (water plus more of the sauce ingredients - molasses, ketchup, Worcester sauce, mustard, & salt/pepper) and let it cook an hour or 2 on high last night so it was bubbling. Then back to low for overnight....they're better, but I still get a few beans not quite done...and I've got a bit of a bitter taste. Boo!


    Realistically - I think I need to toss this pot of beans and start over. I don't think I can 'pull out' the bitter taste.

    To say I'm disappointed (in the beans but mainly in myself for forgetting key steps after I did all that work) is an understatement.


    I think if I had taken the time to boil the rehydrated beans before mixing it recipe up & setting it to slow cook (and used the reserved liquid from the boiling process), my beans would have turned out. Live & Learn. :)



    At least my test batch of gluten-free pancakes this morning (testing out a mix I picked up, that I want to bring to the event this weekend) came out beautifully. One small good thing in a disappointing morning.

    Ginger-Garlic Glazed Mahi Mahi with Warmed Tomato Garnish [Recipe]

    I tried out this recipe last night...and LOVED it. And since I've already started getting requests for the recipe posted as comments on my pictures, I've written up my version of it. :) I will *definitely* make this dish again in the future!

    Ginger Garlic Glazed Mahi Mahi (pan fried), on a bed of Spinach with Quinoa & Brown Rice (and a garnish of warmed heirloom Tomtatos). 10-30-2013


    Ginger-Garlic Glazed Mahi Mahi

    with Warmed Tomato Garnish

    Notes:     1) this glaze can be used for a variety of meats, not just Mahi Mahi.
                    2) Ginger-Garlic Glaze is a recipe adapted from GlutenfreeEasily.com, which in turn adapted it from Allrecipes.com. )

    Ingredients:

    Glaze:
    3 Tbl Honey
    3 Tbl Soy Sauce (Note from GlutenFreeEasily.com: if doing GF version, make sure it is gluten free soy sauce. Or if avoiding Soy, substitute a mix of molasses with more balsamic vinegar for a similar flavor.)
    3 Tbl Balsamic Vinegar
    1+ Tsp grated fresh ginger root
    4 cloves garlic, minced
    2 Tbl olive oil
    Sea Salt, fresh ground (to taste)
    Pepper, fresh ground (to taste)

    4 (6-ounce) Mahi Mahi filets (Less is OK. You just end up with extra sauce/glaze)
    1+ Tbl olive oil
    6-8 Baby Heirloom Tomatoes (or more, depending on taste)


    Directions: 
    1. In a bowl, mix the honey, soy sauce, balsamic vinegar  ginger, garlic, & 2 Tbl olive oil. Transfer to ziplock bag.
    2.  Season fish fillets with sea salt & fresh ground pepper, and then place them in the bag with the mixture, being sure to cover the fish in the mixture, and then seal the bag (squeezing out any excess air)
    3.  Refrigerate fish while it marinates (at least 20 minutes.)
    4. Heat 1+ Tbl Olive Oil in large skillet over medium (to medium high) heat.
    5. Remove fish from the marinade & add to the pan when oil is hot (reserving marinade for sauce).
    6. Fry fish for 4-6 minutes on each side, preferably turning only once, until the fish flakes easily with a fork.
    7. Remove fillets to a serving platter and keep warm
    8.  Pour reserved marinade into the skillet and heat over medium (or medium-low) heat until the mixture reduces to a glaze consistency. It will take a few minutes.
    9. While reducing the sauce, chop baby tomatoes into bits then warm on a small non-stick skillet. (You may wish to add a dash of olive oil to the skillet depending on your pan.) Cook enough to just warm through the tomatoes.
    10. Spoon the glaze over the fish (and spinach if you are serving on a bed of spinach).
    11. Add the warmed tomatoes as a garnish.



    Serve With Suggestions: Serve on a bed of sauteed/cooked spinach (with a bit of glaze drizzled on the spinach), and a small side of brown rice. (I like serving it with a bit of Seeds of Change’s (brand) “Quinoa and Brown Rice, Garlic Flavored”.)

    Savory Baked Acorn Squash (no sugar!)


    On a recent grocery shopping trip I bought an acorn squash, but after I got home I started to think: "Now what am I going to do with this? I don't want to cook it with brown sugar/maple syrup and make it uber-sweet. I want something savory!" It sat for a while in my pantry while I tried to come up with how to prepare it. My previous internet searches only pulled up recipes for the sugary version of this dish (boo!), so last night I finally just decided to try making this similar to how I prepare another squash (Spaghetti Squash) with the basic salt/pepper/butter mix (for Spaghetti Squash I add in parmesan cheese!) and see how the Acorn Squash fared.

    Once I got to the seasoning stage in my cooking experiment, I decided to try 2 different seasonings - I had 2 different halves after all! 
     
    Baked Acorn Squash (Savory, no Sugar) 10-27-2013

    On the one on the Left (picture above) I added a couple pinches of dried Thyme sprinkled over the cut half. On the other (Right squash half shown in above picture) I added in a sprinkling of Garlic POWDER. (I already had salt on it so no need to use garlic salt as that would over-salt it). Recipe is written up below.

    I tried the Thyme flavored half last night and I really liked it! Today for lunch I ate the Garlic flavored one today...and it was another winner. (I do like Garlic after all! Next time I might try mincing up some fresh garlic to sprinkle/spread on one. :).

    RECIPE


    Recipe is sized for a 2 person serving (one half squash per person)...
    ...or 1 person plus leftovers for a future meal. ;-)


    Prep Time: approx 10-15 minutes (or as long as it takes for your oven to preheat)
    Cook Time: approx. 40-60 minutes


    INGREDIENTS:
    1 Acorn Squash
    1+ cup water
    2+/- Tbl Salted Butter
    Fresh Ground Pepper (to taste)
    Kosher Salt (to Taste) - I prefer to use Kosher Salt as its easier to not over-salt things. :) Plus I like the tactile feel of it.

    & one of the following Seasonings:
        - Thyme (dried) - about 2 pinches
        - Garlic Powder - sprinkle to taste


    Directions
    1. Preheat oven to 400 degrees
    2. Half the Squash (being careful to not cut yourself!) & remove the seeds/insides with a spoon.
    3. Using a knife, score the flesh around the cut side of the squash (& also poke a few holes into the backside - the outer skin).
    4. Place the squash cut side down in baking dish with about a cup of water.
    5. Microwave for about 5-6 minutes. When oven is heated, move dish to Oven (covering dish with foil) and cook for approx 20 minutes or until starting to get tender.
    6. Flip squash over so that the cut side is up and place about 1 Tbl of salted butter into each half (in the well).
    7. Rub a bit of the butter (as it starts to melt) onto the scored edges, just enough to lightly coat it.
    8. Grind fresh pepper (to taste) onto the cut squash, then sprinkle kosher salt onto the squash (also to taste).
    9. I added a few pinches of dried thyme (sprinkled) to the Squash on the Left; for the squash on the right I sprinkled some garlic powder.
    10. Return the dish to the oven for another 20-30 minutes (occasionally basting with the melted butter in the well).
    11. Remove from oven when the cut edges are starting to brown and its easy to pierce the flesh of the squash with a fork.
    12. Let sit (rest) a few minutes to cool before serving.

    To serve, I cut just inside the rind/skin with a butter knife (as the flesh is now nice & soft) and score it a few times before serving it whole. Using your fork/spoon, dip pieces of the cut flesh into melted butter and Enjoy!

    George the Cat - Needs a New Home (ASAP)

    A bit over a week ago I got a surprise call from a friend who urgently needed someone to foster (& hopefully eventually adopt) a stray cat that she no longer could adopt herself. George the cat was being picked up from the Vet that afternoon (a Saturday) and couldn't go home with her. While George was fairly healthy (finished with round 2 of the fleas/mites treatment, 1 more to go), and has been neutered, he DOES have the equivalent to "kitty AIDs".  Unfortunately, while he's perfectly fine to be around humans (and I believe dogs), he cannot be around other cats as he would transmit the disease to them. (He's basically a carrier/transmitter and also has a compromised immune system so would get sick from other sick pets.) Thus, he could not be released back into "the Wild" (of East LA) or adopted by my friend (who already had a grown cat).

    So since she couldn't find anyone else in the short time frame (literally hours) before she had to pick George up from the vet and she didn't want to Euthanize him, I agreed to temporarily foster him.

    Which means by that Saturday evening (5/18) I had a new (albeit temporary) Roommate!

    Everyone, meet George the Cat.



    Mostly this past week he's been locked in my bathroom, but I am happy to report that he is definitely litter box trained (only 1 non-litter box incident that first day/night but no problems since that time). He's mostly been hiding in the "cave" I made from taking out the bottom drawer of a plastic 3 drawer bin and putting his bed there instead, but I attribute a lot of that to all the changes he's had recently. I know he's definitely gotten used to the 'morning routine' I started as he now braves coming out of the cave to meow at me if he thinks I'm too slow in putting his food out for him. :) About mid last week I even started keeping the bathroom door open (while I was home) to see if he would venture out and explore, but so far he sticks to the 'comfort' of the cave in the bathroom.

    Unfortunately, I cannot adopt him permanently (various reasons) so I thought I'd advertise through my blog & other social media and see if anyone I know (or acquainted with online) would be interested in adopting a really nice (& mellow) grown cat? Anyone? He just can't be around other cats and needs to stay indoors. (And he has 1 more flea/mite treatment coming up in less than a week, but then he's done.)

    Would anyone in the Orange County/Los Angeles/San Diego area be interested in adopting him? (Soon?)
    The few supplies (litter box, couple of toys, bed, food etc. ) that I have for him would definitely go with him.

    RECIPE: Prosciutto-Wrapped Chicken Breasts Stuffed w/Herbed Goat Cheese

    I made this Chicken dish (which turned out fantastic) & posted pics during the making process meaning to eventually write up a Blog post....and never got around to it. So I'm back dating this post (originally written up on 4/15/2013 to the date I made the dish. :)

    PROSCIUTTO-WRAPPED CHICKEN BREASTS

    STUFFED WITH HERBED GOAT CHEESE

    Becky’s version – I found a few different versions online and used them as a starting point. :)
    
    The FINISHED Product (Plated)
    


    PREP/HANDS ON TIME: 20-30 mins ?? (can also prep chicken ahead of time)

    COOK TIME: Approx 30-40 minutes

    OVEN TEMP: 400°F (or 375°F if also baking brown rice)


    INGREDIENTS:

    8 slices prosciutto (1 package. Use 2 slices per chicken breast)

    4 boneless skinless chicken breasts

    ¼ Tsp Black Pepper

    ¼ Tsp Salt (my preference: Kosher Salt)

    1Tbl+ Olive Oil

    3-4 cloves Garlic, minced

    1-2 Shallots, chopped finely

    4 oz soft goat cheese

    Approx ½- ¾ Tsp Basil (dried)





    DIRECTIONS:

    1. Preheat oven to 400° (or 375° if you are also baking brown rice).

    2. Put Cast Iron Griddle-Skillet (or a regular Cast Iron Skillet) in oven to heat.

    3. Heat Olive Oil in (another) skillet over medium Heat. Stir in Shallots & garlic and cook until shallots turn translucent. (approx 3 minutes). Stir in thyme, salt, pepper & basil; cook & stir for up to one more minute. Transfer the shallot mixture to a bowl and mix in the goat cheese until well combined.

    4. With a sharp knife, cut a slit (approx 1-2” long and 1” deep) in the thick side of the chicken breast. Use your fingers to create a pocket from the slit.

    5. Stuff each chicken breast with about ¼ of the goat cheese mixture. Be sure to wipe off any excess on the outside of the chicken breast.

    
    6. Wrap each chicken in 2 slices of prosciutto (slightly overlapping prosciutto along long edge) so that the pocket opening is covered and most of chicken breasts is wrapped in prosciutto.

    
    7. Using care (and a hot pad) Take the now hot cast iron pan from the oven and place on the stove-top over medium-high heat. Place chicken breast, seam side down, onto the skillet. DO NOT MOVE THE CHICKEN for at least 4-5 minutes before turning over.

    8. After turning over chicken, move pan to the oven (center rack).
    
    9. After 10-15 minutes, turn over chicken and cook another 10-15 minutes in the oven.

    10. Remove pan from oven and let chicken “rest” for at least 5 minutes before serving.

    My Aunt Sue is the Best!!

    She’s been working on a reproduction Civil War quilt for me in her spare time using a late 19th century Singer treadle sewing machine…. and apparently she’s finished it!

    She sent it back with my folks (who were out visiting her and my grandparents in CO for New Years) and requested a picture of my face when I saw the quilt. So today my folks arrived back in town (SNA – OC’s Airport is near my work) and they made a point of stopping by before they drove home in order to surprise me with the quilt.




    And let me tell you, it was indeed a surprise! (And a pleasant surprise at that!)


    Its gorgeous!! I absolutely LOVE how it turned out. (And my dad not only acceded to Sue’s request for a photo, he took it one step further – he *recorded my reaction* using his smart-phone. Err, o_O Thanks Dad?! ;-)

    Day Off = Welcome Free Time!

    My last day of official On-The-Job Work was yesterday (Work is Closed today!), which means:
    I HAVE A DAY OFF!! Woo hoo!!

    What to do with myself? There are  SOOO many choices, I can't decide.
    :)

    I have cooking I can do and recipe research....especially now that I'm having to move to a more whole-foods, non-processed food diet - kinda the like the Specific Carbohydrate Diet (SCD) [think grain-free, lactose-free, sugar-free, etc.]. So I'm looking at various recipes geared for the SCD.

    Tangent Warning:
              Its very interesting to see how much I've improved health wise now that I've extremely limited my grains - no, I haven't cut them completely - in the last few weeks, plus I've upped my fresh veggies and fruit, and nixed refined sugar (except for a couple of splurges - like a chocolate or two on Boxing Day with Family :). Not that I've gone overboard with honey or molasses as alternative sweeteners right now. Just cutting the sugar. Its AMAZING how much of our (American) food products have sweeteners - we as a society have so gotten used to sweet things!
          Between the new diet, and going twice a week to see an Acupuncturist (who's also a Herbalist & Nutritionist - she does a blending of practicing Eastern & Western medicine basically, and I highly recommend her! Dr. Kathleen Albertson, L.Ac., PhD - OC Acupuncture), taking the ground Herbs (blend of Evergreen Herbs mixed by Dr. Albertson) in my tea, I'm definitely seeing positive changes. I'm sure some of it is due to the fact that I'm just getting "down time" at the Acupuncturist visits (yay for relaxation time :). One immediately noticeable change is that my Adult Acne (which has gotten worse in the last few years) has drastically improved! YAY! (Who knew/guessed that it was a reaction to bacteria caused by my body not being able to process certain foods/things? My dermatologist sure didn't!) Anyways, there's other benefits/reasons that I don't feel like going into on this blog posting, but this certainly is a good start. Hopefully will have a much HEALTHIER year in 2012! :)
    End of Tangent 

    Let's see, I could also spend time baking, since I never did do any baking of Christmas/Holiday cookies (I'll have to give away the majority of what I make, but the baking itself is fun - plus it smells wonderful :).

    I could spend some much-needed time sewing (way too many current projects to list right now :) - or Knitting. (I'm currently trying my hand knitting a Sontag or Bosom Friend  from an 1860 pattern...with a little help from someone who's already tried it and written her notes/translation to the pattern: posted here )

    Of course, there are a TON of flicks in the movie theaters right now that I really want to see. (Finally!! There was a long stretch of "eh, no really that interested in spending my money on that movie" - besides my being super busy :).

    My list of Movies currently in theaters (some for not much longer, some just released, listed in no particular order) that I want to see:

         (Yes, I've seen the Swedish films - guess its time to see how the US version holds up :)

    11) Puss in Boots (still playing in my local Cheap/$2 theater :)

    I started Movie Weekend last night with "Breaking Dawn: Part 1" (Yes, the current Twilight Movie - no judging! :).

    I think I may try to see the Muppets & Hugo today (since they've been out longer and have limited show times).

    So many things to possibly do! Love it! :)

    Merry Christmas Everyone!

    Nothing like an impromptu family trip to Disneyland! (That's the nice thing about some of us deciding to splurge and get the Top-of-the-Line Premium pass that lets us in any day of the week - no "blackout dates").

    Sara called in the mid-afternoon and said that as their prior plans fell through, Jeremiah suggested that they travel up & go to Disneyland for the rest of the day...and they were letting us know in case we wanted to join them. Heck Yeah! :D

    So around 5pm my folks and I headed over to the Park. Turns out they were just getting in line for Toy Story ride and we might be able to meet up with them in time. Jeremiah and Chloe were outside of the line (Sara & Keely waiting patiently in the line) so C could "explore" and get some of her wiggles out (since she'd soon be restricted in line again :).

    As we spotted C & J, C was next to the railing of Paradise Bay, looking out over the water. I snuck up behind her and squatted down to be on her level. She turned around, and gave a squeal of delight! Then she spotted Grandpa & Nana - another squeal! Such a happy little 2 yr old! :)

    We rejoined Sara in line and eventually made it to the ride itself. (If you've ever been on the Toy Story ride, you KNOW its a long line - but well worth it! :).

    Let me just say:  C *LOVED* the spinning of the carts. (She kinda got how to fire the toy guns - pull on the cord - so I helped her out, let her try it herself, and then helped her out firing again).

    After Toy Story, we grabbed some dinner in the nearby food court area. (Side Note: the Holiday Special - slice of Beef Pot Roast with Whipped Potatoes & sauteed Veggies...and gravy of course - was excellent! Kudos to the Disney Chef/kitchen staff! Only downside is that their unsweetened Tea somehow got sweetener in it, and it wasn't until I had them check in the back after receiving Sweetened Tea twice in my cup that they discovered that. At least I got to exchanged for a bottle of water, so I was good :).

    After dinner, we headed over to the Bugs Life area where we went on a bunch of Chloe-sized rides. She LOVED them! :) By this time we were getting close to the Evening Fireworks time (they go off at 8:45p), so the Cornthwaites headed off to the Main Park to get a spot to view the Fireworks and the rest of us headed to our respective homes. (Fortunately we had just debarked from the Tram when the Firework Show started so we DID get to see a good portion of it standing in the Tram/Parking Structure area.)

    What a wonderful end to our Christmas Day - impromptu family trip to Disneyland was a success!

    And now, on to 26th of December (Boxing Day) - another day of Family! :)

    Moorpark Civ.War Event is still a Go (even w/ forecast of Rain)

    Just got the word - our event this weekend is STILL on, even though the Weather Forecast looks pretty dismal. (Rain and 60 Degree Temps. Brr! Get chills just thinking about it!)

    Hopefully the rain will hold off long enough that we can our gear/camps get set up BEFORE the rain hits on Friday. (Fingers Crossed!!)

    Send some warm & dry thoughts my way, won't ya? (Weekend's challenge: stay healthy / don't get sick! :)

    Guess I better get cracking on those food items as I'll definitely need them this weekend!!

    My fellow reenactors,



    The Rotary has decided to go forward with the event this weekend. Yes, the weather report is not promising, and everyone is well aware of that, but the problem is that critical personnel on the Rotary's side will be missing the following weekend, so come what may, the event will take place as scheduled.



    The good news is that rainfall in Moorpark always seems to be different than what LA gets. Last weekend, the rainfall was 3/4 inch in LA, but only a third of an inch in Moorpark. The ground at the site is very good at wicking up rain, so the Rotary is optimistic that the problems with the weather will be minimized. Currently, no rain is expected at all until very late Friday night, so this should aid setup. Even then, who really knows at this point with weather predictions just what will happen and when? I understand that Sunday is supposed to be clear.



    So, now it's on to Moorpark. C'mon out and join us for the weekend.

    My friend Heather (@Casketgirl) recently had her baby boy...2 weeks early!! Mom is doing pretty well & is home from the hospital, but baby Duncan is still hanging out in NICU trying to recover from some mystery infection. Boo!! :(

    So, to help keep everyone's spirits up, they've decided to ask for Photos Welcoming Duncan Home - and thus was born the "Welcome Home Duncan" Project!

    Your task, should you choose to accept it (and I sincerly hope you WILL), is to take a photo of yourself* with a "Welcome Home Duncan" sign and send it in to Heather/Casketgirl.

    *Or a picture of any of the following (with a Welcome Home sign):  Children, Co-Workers, Pets, Garden Gnome(s), Action Figures, etc. . ;-) Be Creative! :)

    Well, I *finally* got around to uploading my pic from the "CGW Goes to see the Harry Potter & the Deathly Hallows Part 1 Movie" event last November.

    It was such a great time - we got a good number of people who showed up *in costume* no less, and of course lots of people staring at us (and occasionally asking us to take pics with them and or them telling us how 'cool' it was that we came in costume). We certainly enjoyed ourselves and especially the Picture Session afterwards (as evidenced by some of the fun posed photos we took in this set).

    I'm certainly looking forward to the NEXT event, though of course I'm sad that its the last one. After all...."It all ends 7.15".
