I haven't written up the recipes for posting yet, but since there was definite interest, I'll be sure to do so in the next few days.<br />

<strong>French Onion Soup</strong><br />
I made my soup base first, then I could ladle out individual bowls for topping with bread & cheese & broiling when I wanted them. I based mine on 2 different recipes - going back & forth between theirs. When I made mine, I thought the proportions of onions to broth was too much - especially when I added the baguette bread - so I ended up making MORE broth. I'll be sure to add in that correction to the version of the recipe I post for you guys. :)<br />

This soup is very rich, but actually has a thin broth so it's nice & light. This is based on a recipe my mother developed while cooking at a Summer Camp in their kitchen one year.<br />

<strong>Ham & Split Pea Soup</strong><br />
I made the ham stock the night before on the stove, using a ham bone I had in the Freezer. Next day I made the actual Soup and let it sit all day in the crock pot while I was at work. The recipe is based on the one my mother gave me, but I've adjusted the proportions to have more peas to the rest of the ingredients.<br />

Everyone here makes it with beef, but really, it should be made with Lamb. (Technically, if it's made with anything <em>other </em>than Lamb, it's called a "Cottage Pie". of a family recipe that is <u>always</u> a hit. <span style="mso-spacerun: yes;"> </span>These beans can be eaten cold, but they are
fabulous warm/hot. <span style="mso-spacerun: yes;"> </span>And if you let them
sit a day, they’re even better as leftovers! The flavors really get a chance to
meld if they sit a day or two before serving.</i> <em>I'm still working on the converting the recipe from using canned beans to re-hydrating dried beans, but this version is nice & simple...and works like a charm! (Still learning how to use re-hydrated beans.)<br />So I was all excited about an 'easy' family recipe for Molasses Slow Cooked/Baked Beans that I was going to make in advance for the weekend (and bring to my Civil War event). The beans always turn out well and I even like them cold.<br /><br /><br /> This time I decided *instead of using canned beans* (what I grew up using & my recipe assumes), I'd try making this batch from scratch using re-hydrated dried beans. Something different, and a challenge for me (as I haven't had much practice cooking using re-hydrated dried beans. It's something I should get more comfortable using, so I need to make recipes using them to "practice".)<br /><br /><br /> So Monday night I got out a mix of dried beans that seamed like they'd be good together, measured them out (I measured out too much, first mistake!), and set them to soak overnight. In the morning I drained & rinsed, then set them to soak some more while I was at work.<br /><br /><br /> Tuesday I cooked up my bacon (in the oven - I like it crisp) and drained the soaking beans & put them in a resealable bag for the fridge. Wednesday morning I assembled all my ingredients (trying to estimate how much more on the sauce ingredients because I had re-hydrated a tad too many beans) and set the mixture in my crock-pot on low and left for work.<br /><br /><br /> Big Mistake. <br /><br /><br /> I didn't adjust enough for the uncooked re-hydrated beans. I forgot that on my last recipe using re-hydrated beans I had to boil them first before slow cooking, so I didn't do that this time. Nor did I put any of the reserved liquid into the crock pot (to add extra liquid to compensate for the re-hydrated beans) for while I was gone all day. They were dry and not done.<br /><br />:(<br /><br /><br /> Plus I used Great Northern Beans (which I hadn't used before) and I think they have a different cooking time than the other beans - black, red, pink, & small white beans. (Nothing against the Northern Beans, just a factor I didn't take into consideration.)<br /><br /><br /> I tried added more liquid (water plus more of the sauce ingredients - molasses, ketchup, Worcester sauce, mustard, & salt/pepper) and let it cook an hour or 2 on high last night so it was bubbling. Then back to low for overnight....they're better, but I still get a few beans not quite done...and I've got a bit of a bitter taste. Boo!<br /><br /><br /> Realistically - I think I need to toss this pot of beans and start over. I don't think I can 'pull out' the bitter taste.<br /><br />To say I'm disappointed (in the beans but mainly in myself for forgetting key steps after I did all that work) is an understatement. <br /><br /><br /> I think if I had taken the time to boil the rehydrated beans before mixing it recipe up & setting it to slow cook (and used the reserved liquid from the boiling process), my beans would have turned out. Live & Learn. :)<br /><br /><br /><br />At least my test batch of gluten-free pancakes this morning (testing out a mix I picked up, that I want to bring to the event this weekend) came out beautifully. ground pepper, and then place them in the bag with the mixture, being sure to

My previous internet searches only pulled up recipes for the sugary version of this dish (boo!), so last night I finally just decided to try making this similar to how I prepare another squash (Spaghetti Squash) with the basic salt/pepper/butter mix (for Spaghetti Squash I add in parmesan cheese!) and see how the Acorn Squash fared. <br />

On the one on the Left (picture above) I added a couple pinches of dried Thyme sprinkled over the cut half. On the other (Right squash half shown in above picture) I added in a sprinkling of Garlic POWDER. (I already had salt on it so no need to use garlic salt as that would over-salt it). I tried the Thyme flavored half last night and I really liked it! Today for lunch I ate the Garlic flavored one today...and it was another winner. (I do like Garlic after all! Next time I might try mincing up some fresh garlic to sprinkle/spread on one. :).<br />

George the cat was being picked up from the Vet that afternoon (a Saturday) and couldn't go home with her. While George was fairly healthy (finished with round 2 of the fleas/mites treatment, 1 more to go), and has been neutered, he DOES have the equivalent to "<a href="http://en.wikipedia.org/wiki/Feline_immunodeficiency_virus" target="_blank">kitty AIDs</a>". Unfortunately, while he's perfectly fine to be around humans (and I believe dogs), he <u>cannot be around other cats</u> as he would transmit the disease to them. (He's basically a carrier/transmitter and also has a compromised immune system so would get sick from other sick pets.) Thus, he could not be released back into "the Wild" (of East LA) or adopted by my friend (who already had a grown cat).<br />
<br />
So since she couldn't find anyone else in the short time frame (literally hours) before she had to pick George up from the vet and she didn't want to Euthanize him, I agreed to temporarily foster him.<br />
<br />
Which means by that Saturday evening (5/18) I had a new (albeit temporary) Roommate!<br />

Mostly this past week he's been locked in my bathroom, but I am happy to report that he is <em>definitely</em> litter box trained (only 1 non-litter box incident that first day/night but no problems since that time). He's mostly been hiding in the "cave" I made from taking out the bottom drawer of a plastic 3 drawer bin and putting his bed there instead, but I attribute a lot of that to all the changes he's had recently. I know he's definitely gotten used to the 'morning routine' I started as he now braves coming out of the cave to meow at me if he thinks I'm too slow in putting his food out for him. :) About mid last week I even started keeping the bathroom door open (while I was home) to see if he would venture out and explore, but so far he sticks to the 'comfort' of the cave in the bathroom. <br />
<br />
Unfortunately, <strong>I cannot adopt him permanently (various reasons)</strong> so I thought I'd advertise through my blog & other social media and see if anyone I know (or acquainted with online) would be interested in adopting a really nice (& mellow) grown cat? Anyone? He just can't be around other cats and needs to stay indoors. (And he has 1 more flea/mite treatment coming up in less than a week, but then he's done.)<br />

Would anyone in the Orange County/Los Angeles/San Diego area be interested in adopting him? (Soon?) <br />
The few supplies (litter box, couple of toys, bed, food etc. ) that I have for him <u>would definitely go with him</u>.<br />

DIRECTIONS:<br />

1. Preheat oven to 400° (or 375° if you are also baking brown rice).<br />

2. Put <strong>Cast Iron </strong>Griddle-Skillet (or a regular <strong>Cast Iron Skillet</strong>) in oven to heat.</div>

3. Heat Olive Oil in (another) skillet over medium Heat. Stir in Shallots & garlic and cook until shallots turn translucent. (approx 3 minutes). Stir in thyme, salt, pepper & basil; cook & stir for up to one more minute. Transfer the shallot mixture to a bowl and mix in the goat cheese until well combined.</div>

4. With a sharp knife, cut a slit (approx 1-2” long and 1” deep) in the thick side of the chicken breast. Use your fingers to create a pocket from the slit. </div>

5. Stuff each chicken breast with about ¼ of the goat cheese mixture. Be sure to wipe off any excess on the outside of the chicken breast. </div>

6. Wrap each chicken in 2 slices of prosciutto (slightly overlapping prosciutto along long edge) so that the pocket opening is covered and most of chicken breasts is wrapped in prosciutto. </div>

7. Using care (and a hot pad) Take the now hot cast iron pan from the oven and place on the stove-top over medium-high heat. Place chicken breast, seam side down, onto the skillet. DO NOT MOVE THE CHICKEN for at least 4-5 minutes before turning over. </div>

I have cooking I can do and recipe research....especially now that I'm having to move to a more whole-foods, non-processed food diet - kinda the like the Specific Carbohydrate Diet (SCD) [think grain-free, lactose-free, sugar-free, etc.]. So I'm looking at various recipes geared for the SCD.<br />
<br />
<u>Tangent Warning</u>: <br />
Its very interesting to see how much I've improved health wise now that I've extremely limited my grains - no, I haven't cut them completely - in the last few weeks, plus I've upped my fresh veggies and fruit, and nixed refined sugar (except for a couple of splurges - like a chocolate or two on Boxing Day with Family :). Not that I've gone overboard with honey or molasses as alternative sweeteners right now. Just cutting the sugar. Its AMAZING how much of our (American) food products have sweeteners - we as a society have so gotten used to sweet things! <br />
Between the new diet, and going twice a week to see an Acupuncturist (who's also a Herbalist & Nutritionist - she does a blending of practicing Eastern & Western medicine basically, and I highly recommend her! Dr. Kathleen Albertson, L.Ac., PhD - <a href="http://www.orangecountyacupuncture.com/">OC Acupuncture</a>), taking the ground Herbs (blend of <a href="http://www.evherbs.com/">Evergreen Herbs</a> mixed by Dr. Albertson) in my tea, I'm definitely seeing positive changes. I'm sure some of it is due to the fact that I'm just getting "down time" at the Acupuncturist visits (yay for relaxation time :). One immediately noticeable change is that my Adult Acne (which has gotten worse in the last few years) has drastically improved! YAY! (Who knew/guessed that it was a reaction to bacteria caused by my body not being able to process certain foods/things? My dermatologist sure didn't!) Anyways, there's other benefits/reasons that I don't feel like going into on this blog posting, but this certainly is a good start. Hopefully will have a much HEALTHIER year in 2012! :)<br />

Let's see, I could also spend time baking, since I never did do any baking of Christmas/Holiday cookies (I'll have to give away the majority of what I make, but the baking itself is fun - plus it smells wonderful :).<br />

Nothing like an impromptu family trip to <b>Disneyland</b>! (That's the nice thing about some of us deciding to splurge and get the Top-of-the-Line Premium pass that lets us in any day of the week - no "blackout dates").<br />

Sara called in the mid-afternoon and said that as their prior plans fell through, Jeremiah suggested that they travel up & go to Disneyland for the rest of the day...and they were letting us know in case we wanted to join them. Heck Yeah! :D <br />

So around 5pm my folks and I headed over to the Park. Turns out they were just getting in line for Toy Story ride and we might be able to meet up with them in time. Jeremiah and Chloe were outside of the line (Sara & Keely waiting patiently in the line) so C could "explore" and get some of her wiggles out (since she'd soon be restricted in line again :). <br />

As we spotted C & J, C was next to the railing of Paradise Bay, looking out over the water. I snuck up behind her and squatted down to be on her level. She turned around, and gave a squeal of delight! Then she spotted Grandpa & Nana - another squeal! Such a happy little 2 yr old! :)<br />

We rejoined Sara in line and eventually made it to the ride itself. (If you've ever been on the Toy Story ride, you KNOW its a long line - but well worth it! :).<br />

Let me just say: C *LOVED* the spinning of the carts. (She kinda got how to fire the toy guns - pull on the cord - so I helped her out, let her try it herself, and then helped her out firing again).<br />

After Toy Story, we grabbed some dinner in the nearby food court area. (Side Note: the Holiday Special - slice of Beef Pot Roast with Whipped Potatoes & sauteed Veggies...and gravy of course - was excellent! Kudos to the Disney Chef/kitchen staff! Only downside is that their unsweetened Tea somehow got sweetener in it, and it wasn't until I had them check in the back after receiving Sweetened Tea twice in my cup that they discovered that. At least I got to exchanged for a bottle of water, so I was good :).<br />
<br />
After dinner, we headed over to the Bugs Life area where we went on a bunch of Chloe-sized rides. She LOVED them! :) By this time we were getting close to the Evening Fireworks time (they go off at 8:45p), so the Cornthwaites headed off to the Main Park to get a spot to view the Fireworks and the rest of us headed to our respective homes. (Fortunately we had just debarked from the Tram when the Firework Show started so we DID get to see a good portion of it standing in the Tram/Parking Structure area.)<br />

What a wonderful end to our Christmas Day - impromptu family trip to Disneyland was a success! <br />

The Rotary has decided to go forward with the event this weekend. Yes, the weather report is not promising, and everyone is well aware of that, but the problem is that critical personnel on the Rotary's side will be missing the following weekend, so come what may, the event will take place as scheduled.<br />

The good news is that rainfall in Moorpark always seems to be different than what LA gets. Last weekend, the rainfall was 3/4 inch in LA, but only a third of an inch in Moorpark. The ground at the site is very good at wicking up rain, so the Rotary is optimistic that the problems with the weather will be minimized. Currently, no rain is expected at all until very late Friday night, so this should aid setup. Even then, who really knows at this point with weather predictions just what will happen and when? I understand that Sunday is supposed to be clear.<br />

Well, I *finally* got around to uploading my pic from the "CGW Goes to see the Harry Potter & the Deathly Hallows Part 1 Movie" event last November. <br />

It was such a great time - we got a good number of people who showed up *in costume* no less, and of course lots of people staring at us (and occasionally asking us to take pics with them and or them telling us how 'cool' it was that we came in costume). We certainly enjoyed ourselves and especially the Picture Session afterwards (as evidenced by some of the fun posed photos we took in this set).<br />

Its a fun little/big municipal fair and its been going strong since 1958!! They have the BEST Strawberry Shortcakes (not to be missed)! Its always a treat to take a few hours and wander around, eating Fair Food, seeing what's for sale in the booth, etc....and Admission is FREE. :)<br />

I've been attempting to braid my hair (which is relatively long) in a single braid behind me for the past whatever number of minutes, and it just isn't happening. Getting my injured arm into a position for braiding my hair strains those sore ligaments to the point I have to stop cause its just painful.<br />

This morning was another example: I literally FELL out of bed (tangled in my bedsheets/coverlet) in my half-awake scramble to reach a cup that was falling...and of course landed on my sore/previous injured (so easily hurt) arm. Doh! OUCH! Its like a good 3+ feet drop (I have an "elevated" bed that was made for me years ago so I could store things easily under it. Nice most of the time, just not this morning!).<br />

At least the arm is only a bit sore and not TRULY re-injurred. I'm finally heading back to Fort Tejon for a Civil War re-enactment! (It's been way too long since I last made the trek up there.) And I'm super excited that I get to cook in the Officer's Headquarter's KITCHEN!! An actual Kitchen with a Hearth (i.e. Fireplace)!<br />

No, I'm not cooking ALL the meals for our group this weekend (Yay for learning from the past!), but I did sign up to cook at least one - Saturday Supper (evening meal).<br />
<br />
Right now I'm debating between 2 meals & can't make up my mind which I'd rather make (assuming I have cookware - dutch ovens/kettles - large enough to cook these):<br />
<br />
<u>1st Option</u>: Apples & Buttons ("Schnitz un Knepp") or Dried Apple Schnitz. German/Swish dish. <br />
>Cook a ham (on a bone) for 2 hrs with dried apples (that have soaked overnight) & brown sugar. Serve with Potatoes (boiled or baked) and Corn (I'm thinking of buying frozen kernals & cooking them up in a skillet). Possibly serve also with biscuits available.<br />

<u>2nd Option</u>: Stewed Chicken & Dumplings. <br />
>like the name says - whole chicken cooked (stewed) in a pot with fresh-made dumplings. Haven't though out yet what to serve with it...probably same as above for rest (Boiled Potatoes & Corn).<br />

Both of these are assuming there's a pot (dutch oven or kettle) that's big enough for me to put a whole chicken or a ham bone into it for cooking on the fire/hearth, of course. Considering the weather forecast for this weekend, they both sound nice & warm (besides tasty!) for a chill evening in the middle of a Mountain Pass. :)<br />

So....what do YOU guys think? (Especially those of you that might be eating with me ;-). Time to voice your opinion while I'm making up my mind. Anyone have a preference for one over the other?<br />

Fortunately, the erstwhile lens landed on the table (and not in my frosting or on the cake I was decorating), but there was NO WAY I was putting that lens back in my eye! (Good thing it was just a “Daily” so I could toss it & not have to save it for cleaning later). Unfortunately, as that was my dominant eye, and while I can see ok up close, far away (and at night) is blurry…and with one I focused & the other eye trying to compensate for sudden change in focus (i.e. sans contact lens), let’s just say it made for an interesting rest of the evening! (Trying to keep your dominant eye closed while looking out of the other eye, for a period of time, is harder than it seems!)</div><div class="MsoNormal"><br />

No, this is not one of MY creations, but something my Aunt is making for me. Isn't it FANTASTIC? :) She sent me this pic last night to show me the first block of my new reproduction Civil War Quilt that she has in the works for me. And yes, this quilt will make an appearance with me at events. :)<br />

My Aunt Sue has graciously offered to make me a Civil War Reproduction Quilt...on her 1889 Treadle Singer Machine. How Cool is that?!? Of course I shall be reimbursing her for costs, etc. So I finally settled on a Antique Star pattern and a theme of browns & reds (possibly with blue accents :) and the project is finally in "GO mode". YAY! Here's a pic she sent me of the first block (of 124) with her 1889 Treadle machine. Isn't it GREAT!! I'm so excited to see the final Quilt. YAY!!! :)<br />
